Former Seed Savers Exchange fellow member Lucina Cress has been canning miniature stuffed peppers for decades using capsicum from her own garden . Lucina ’s Miniature Stuffed Peppers were a hit year after twelvemonth at her local hospital bazaar . Keep reading for the recipe !

In the 1980s , Lucina list three varieties of miniature bell pepper semen on theExchange . An elderly neighbor had given Lucina‘Miniature Red Bell ’ pepperand‘Miniature Yellow Bell ’ pepperseeds . But her favorite , the‘Miniature Chocolate Bell ’ Piper nigrum , arose from a harvest of full - size chocolate bell white pepper in Lucina ’s own garden . Lucina Cress told SSE co - founder Diane Ott Whealy , “ An elderly lady grow these Madagascar pepper in Ohio and passed them on to me . The chocolate is still my favorite , always so mild and sweet and all the plants would raise early on and kept get along on till frost . ”

Lucina’s Miniature Stuffed Peppers Recipe

Lucina has been make the stuffed peppers for decades . “ I think I first list the capsicum germ in the 1981 Seed Savers Exchange [ Yearbook ] . I always offer up to send the formula for stuffing and terminate with the white pepper source . Each class , our infirmary adjuvant branch stuffed miniature white pepper for the hospital bazaar . Instructions from Lucina:

Makes 15 dry pint

Shred cabbage amercement ( SSE faculty recommend the‘Early Jersey Wakefield’cabbage ) . For each 3 quarts of cabbage , add 2 1/2 teaspoons salt and let stand for 20 minutes .

While the cabbage is soaking , rinse enough of Lucina ’s Miniature Bell peppers of all colors to make 15 pints . Cut a small scuttle on top and take out the seeds . Learn how to save capsicum seeds .

squelch the liquid off the cabbage and discard .
